As we transition into fall, this nourishing lentil stew is the perfect light, plant-based dish. Packed with protein, fiber, and antioxidants, this veggie-loaded soup will leave you feeling satisfied. I love to make a big batch on Sundays so I have easy leftovers for the week ahead.

Ingredients:

- 1 Tbsp olive oil

- 1 yellow onion, diced

- 3 cloves garlic, minced

- 1 cup dried green lentils

- 6 cups vegetable broth

- 1 (15 oz) can diced tomatoes

- 2 medium carrots, peeled and diced

- 2 medium potatoes, peeled and diced

- 1 tsp cumin

- 1 tsp paprika

- 1 bay leaf

- Salt and pepper to taste

Instructions:

1. In a large soup pot, heat the olive oil over medium heat. Add the onion and sauté for 5 minutes until translucent.

2. Add the garlic and cook for 1 minute until fragrant.

3. Add the dried lentils, vegetable broth, diced tomatoes, carrots, potatoes, and spices. Bring to a boil.

4. Reduce heat to low, cover and simmer for 25-30 minutes, until lentils and veggies are tender.

5. Remove bay leaf. Season to taste with salt and pepper.
